Ingredients

Wet ingredients

  • ½ cup dairy free butter alternative (Ex: Smart Balance, Earth Balance)
  • ½ cup butter flavored Crisco (add 1 to 2 more tablespoons for chewier cookies)
  • ½ cup white sugar
  • 1 cup brown sugar (packed)
  • 1 tsp. vanilla
  • 2 eggs

Dry ingredients

  • 3 cups white flour
  • ½ tsp. salt
  • 1 tsp. baking soda
  • 2 cups dairy free chocolate chips

Instructions

  • Add the dairy free butter, butter flavored shortening, white sugar, and brown sugar to a mixer or large bowl.
  • Mix on low speed or stir until the ingredients are creamy.
  • Add the vanilla and eggs. Mix well until all ingredients are incorporated.
  • In a separate bowl, sift the dry ingredients: flour, salt, and baking soda.
  • Add the sifted, dry ingredients a little at a time to the wet ingredients. Mix on low or stir as you add.
  • When all the ingredients are thoroughly mixed, you can either add the dairy free chocolate chips or form your cookies and add about 4 or 5 chips to each cookie.
  • I use a small spoon to scoop out just enough dough for each cookie.
  • Bake in a preheated 350° oven for approximately 12 minutes.

Notes

If you do not want to use all the dough, you can save the remaining cookie dough in plastic wrap in your freezer. I use Glad Press and Seal Wrap. The dough usually stays good in the freezer for a couple of weeks.
