Dairy Free Crockpot Recipe – Chicken and Rice

A delicious dairy free crockpot recipe for chicken and rice.

Equipment

  • 1 large crockpot

Ingredients
  

Crockpot ingredients

  • 1 can chicken noodle soup (read ingredients to make sure it's dairy free)
  • 1 ½ cups water
  • 3 or 4 chicken breasts
  • 1 ½ tbsp vinegar
  • 2 cloves garlic (fresh, chopped)
  • 2 tbsp corn starch (dissolved in hot broth)
  • 1 cup cashew/almond milk (Silk with pea protein)
  • 12 oz bag frozen broccoli florets (steamed and drained)

separate sauce pan

  • 1 cup white rice
  • 2 cups water

Instructions
 

  • to a large crockpot set on high, add the can of chicken noodle soup and the water
  • stir well
  • add the chicken breasts
  • pour the vinegar over the chicken breasts
  • add the chopped garlic
  • If you can, let the above ingredients cook for at least 1 hour before adding the rest of the ingredients
  • dissolve the cornstarch in a separate container using some of the broth from the crockpot or cold water and then, whisk well
  • add the dissolved, whisked cornstarch to the crockpot
  • add the cashew/almond milk to the crockpot
  • If using frozen broccoli that can be steamed in the bag, add it to the crockpot 1 to 1 and 1/2 hours before you plan to eat or end of cooking time. Follow the directions on the bag and be sure to drain all the liquid out of the bag before adding the broccoli to the crockpot.
  • You can use fresh chopped broccoli. If you do, add it to the crockpot at least 2 and 1/2 hours before you plan to eat or end of cooking time.
  • About 15 to 20 minutes before you want to eat, begin cooking your rice in a separate sauce pan on the stove. Follow the directions on the package. The directions usually call for 2 cups water and 1 cup rice, bring to a boil, turn down heat to simmer, cover, and cook for 15 minutes.
  • If you set the crockpot to high, you can expect the total cook time to be 5 to 5 1/2 hours.
